A common way we cook our scrambled eggs in Colombia!

Ingredients

  • 2 tsp olive oil
  • 2 medium roma or vine tomatoes
  • 3 spring onions/scallions
  • 4 large eggs
  • 3/4 tsp sazon

Huevos Pericos is a classic Colombian breakfast. Usually paired with arepas, cafe con leche or hot chocolate and can be elevated to also have bacon (tocino) farmer’s cheese and avocado on the side. It is a delicious way to celebrate breakfast.

What is Sazón?

Pronounced saw-son, is a type of flavorful seasoning, or seasoning salt, used in Spanish and Mexican cooking. Reddish in color, sazón seasoning typically includes cilantro (coriander), cumin, ground annatto and oregano. There are many brands of sazón out there, here are 2 that I use pretty often. The main difference is that the Goya brand has MSG while the Badia brand does not. They both taste similar but may have a slight variation in their ingredients. If you can’t find either of these 2 sazon types, I found this homemade recipe online if you want to make your own.

Step by Step Instructions

Step 1

Cut your tomatoes in half, remove seeds and dice them into small pieces. Thinly slice your spring onions/scallions to include the white and green parts, but discard the end with the roots.

Step 2

Heat olive oil in a medium nonstick skillet over medium heat.

Step 3

Add the spring onions to the heated pan and cook until they soften, about 1.5 minutes.

Step 4

Add the tomato and season with your sazon, cook until the liquid from the tomato evaporates, about 1.5 minutes. This is what we call a guiso, and it is the base for many Colombian dishes. You can add a bit more olive oil if you feel that your guiso is looking a little dry.

Step 5

Add the beaten eggs to your pan and cook over medium heat, stirring a few times until just cooked. Take off the heat and serve.
